Recipes

Sweet Potato and Black Bean Tacos-

Benefits - Rich in Protein, Fiber, Vitamins, Minerals and antioxidants that support a healthy life.

  • 2 medium sweet potatoes, peeled and cubed
  • 1 can of black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • Olive oil
  • Salt and pepper to taste
  • Corn or flour tortillas
  • Fresh cilantro
  • Lime wedges for serving




Preheat oven to 400°F (200°C)

Toss cubed sweet potato in olive oil, chili powder, paprika, cumin and salt and pepper and roast for 25-30 minutes (until potato turns into crispy from outside.

In a pan, stir and cook black beans in olive oil, cumin, paprika for 5 to 7 minute until beans gets slightly softened

Mix all the mixture in a bowl

Bring your tortillas and warm it.

Serve the mixture onto each tortilla. Top up with choice of veggies, cilantro and a squeeze of lime. Serve with salsa or green salad.
